Budget Meals-SALSA CHICKEN & RICE
Here’s an easy meal that’s perfect to make when chicken is on sale.
What you’ll need-
2 cups cooked white rice, kept warm
1 tablespoon oil
1 pound boneless, skinless chicken breast halves, cut into strips
1 medium onion, chopped
1 small red bell pepper, sliced
1 jar (16 oz.) Salsa
1/2 cup shredded Mexican-blend cheese
Sour cream (optional)
Chopped fresh cilantro (optional)
Over medium high heat and in a large skillet, heat the oil.
Add the chicken, onion and bell pepper and cook stirring occasionally for 10 to 12 minutes or until chicken is no longer pink.
Stir in the salsa and bring to a boil then remove it from the heat and sprinkle with the cheese. Cover and stand for 5 minutes or until cheese is melted.
Serve over rice.
If it’s within your budget serve it with some fresh cilantro and sour cream.
