    Quick and Easy Supper-Mediterranean Cod

    Here’s a quick supper that uses cod (or any similar fish), along with peppers, onions, some herbs and olives for a good for you but budget friendly meal. In a large skillet, over medium high heat, add about two tablespoons of oil and then add one onion, sliced thinly and one green pepper that’s been thinly sliced.   Sprinkle in some salt and pepper and sauté until the onion and pepper is slightly softened.   Add a 15 ounce can of diced tomatoes.   Stir in one teaspoon each of dried oregano and basil.     This one could be a breakfast, lunch or a quick, light supper. Pantry staple items, ten minutes of your time and you have a meal. Serve this with hash browns or cubed pan-roasted potatoes, more salsa and some sour cream. 1 15 ounce can chili beans, drain slightly 4 pieces of bread, toasted 1/3 cup salsa 1/3 cup shredded cheese 4 eggs   Pre-heat oven to 375 degrees.     Kale always seems to be on sale, but the price per bunch dips even lower around this time of the year. It’s a superfood too which makes it a nutritional powerhouse. However, two things I’ve found are, one; it can often be bitter. Two, it gives your mouth a workout because of the chewiness of this veggie. I’ve found a couple of ways to overcome these problems.     My upcoming cookbook contains a recipe for carrot soup. However, after reading the article about foods you can eat when you’re broke (and seeing that item on the list), it inspired me to create another one.     One item that’s a staple in my pantry is black beans. I think they have a better consistency and taste than lots of other varieties which makes them perfect for vegetarian recipes. In this Meatless Monday meal I’ve used them as a topping, along with a cheese sauce to make nachos.     Sometimes I open up the fridge and think about what I can make with leftovers. Oftentimes there’s a little of this and a little of that, but not enough to make a full meal. Last week refried beans, salsa, leftover broccoli, carrots, and pasta sauce sat on the shelf. I thought soup, but then decided on pizza.
