    Quick and Easy Supper-Mediterranean Cod

    Here’s a quick supper that uses cod (or any similar fish), along with peppers, onions, some herbs and olives for a good for you but budget friendly meal. In a large skillet, over medium high heat, add about two tablespoons of oil and then add one onion, sliced thinly and one green pepper that’s been thinly sliced.   Sprinkle in some salt and pepper and sauté until the onion and pepper is slightly softened.   Add a 15 ounce can of diced tomatoes.   Stir in one teaspoon each of dried oregano and basil.     Last week was all about peppers. I had red and green peppers, hot peppers, lipstick peppers…you get the picture. After an hour or so roasting them, drying them, and chopping them to put in the freezer for fall and winter eating, I still had too many peppers. As I always do, I checked what other ingredients I had on hand and brainstormed what I could make. This is the result.     One recipe I’ve attempted to tweak is vegetarian chili. I’ve tried lots of different recipes and none seemed to have a richness and depth of flavor of its meat based counterpart. One thing I love about cooking is experimenting with ingredients until I come up with a dish I like so much that I make it over and over again. I think I finally found a solution, and best of all most of the ingredients were on hand in the pantry and hence the name.     A few weeks ago I found myself with too many peppers. I thought about freezing or dehydrating them but then thought why not make them the star of dinner. Time was short so I turned to the slow cooker. My first idea was to use a mixture of vegetables to put into the peppers. However, I thought why not try using TVP (more about where to buy this and other meatless meal staples in a later post).     When we signed up for the CSA program in February I thought ahead to all the goodies that I’d find each week and so far I haven’t been disappointed. Last week’s delivery included- Peppers, melon, watermelon, green beans, cucumbers, tomatillos, eggplant, parsley, Savoy cabbage, carrots, Sungold cherry tomatoes, tomatoes.     It’s Meatless Monday-Vegetable Stuffed Poblano Peppers

     Sometimes vegetable based recipes can be on the bland side so I like to add herbs and spices to kick things up. I’ve also made this recipe using regular peppers too but have to say the poblano variety have my vote.
