    It’s Meatless Monday-Eggs Benedict Goes Veggie

    One of the restaurants close to where I live serves vegetarian Eggs Benedict as one of the items on its brunch line up. Instead of the bacon, the substitute a slice of tomato. While it’s tasty, I thought about taking it one step further. In my version the bacon gets replaced by some skillet roasted vegetables and then topped with an herb and cheese sauce.     This week, and as it’s holiday season, I thought I’d try something sweet for Meatless Monday. Pineapples were on sale and most places are offering them for under $3. In fact, today I purchased one for $2.50. They’re sweet as is but I decided to up the sweetness just a little more by grilling them with some brown sugar.     It’s Meatless Monday-Three Spreads for Holiday Entertaining…or even lunch

    I thought for this Meatless Monday I create something for the holiday season. These three spreads use one basic ingredient, cream cheese. They’re easy to make in a food processor and can be eaten with crackers, raw veggies, and even on toast for a quick lunch or snack. I think the mushroom variety would also be perfect spread on puff pastry and made into a tasty appetizer.
